Would it be wise to TAS one, some, or all of the Monkey Island games? If so I might try my hand at the first or second game, and if that works, then the other of the two, and then the third if there is an emulator for that.

Point-n-click adventures usually do not gain much from TASing since most of the time it will be frame-perfect clicking. But if you know some glitches or sequence breaks that are not doable in real-time, perhaps it could be interesting. We do have a TAS of a Space Quest game after all: [1907] DOS Space Quest IV: Roger Wilco and the Time Rippers by c-square in 07:36.52 But don't be discouraged by that, even if the result is not submittable, it is good practice on TASing.

Optimizing the swordfighting sequences to gain just the right amount of questions/answers is going to be difficult. Or optimizing the random maze-sections for a shorter path. Or rowing. Good luck!

I know you don't have to see the clerk introducing the combination to open the safe, and you don't need the guide to be able to find the Swordmaster as long as you know the path beforehand (generated randomly at the start of each game). I don't know if that's true for the maze that requires you the help of a navigator, but it might be possible. You can skip talking to a ghost, and picking one grog mug if you open the correct doors in that scrolling town screen. You can also learn one insult if you say a pretty weak insult to the troll on the bridge, but for some reason I remember it wasn't necessary in the end.
No.

Hum, I don't like that random-every-game business. I guess I'd need to dig down to see what RNG is used for swordfighting.

Even if you can get through the underworld maze without the head of the navigator, you still need its eyeball-necklace in order to get on the ghost ship, so at most you'd just save a few frames from not taking out the head.
