Are you going through that phase right now? As for me, I like Montery Jack and Swiss on Sandwiches, Cheddar/Colby Jack on baked potato, and a random hard cheese (provolone?) on pasta.

Hm, I was going to post a praise about Auracheese (I bought a sector of it a week ago and have been enjoying it immensely in small pieces), but apparently I have already posted one. Drats. My favourite side dish is Aura cheese beetroot casserole.

Gouda, sliced into razor-thin and square pieces. Yummy. Oh, and cottage cheese. Goes great with any kind of noodles. :D
